Swedish flavours at home.

Ingredients

  • 500g sweet potatoes or mash sweet potatoes
  • 1 tbsp olive oil
  • 270g pack beef mince meatballs
  • 2 shallots, peeled and chopped
  • Handful dill, chopped, or 1 tsp dried
  • 1 tsp wholegrain mustard
  • 200ml reduced fat crème fraîche

Method

  1. Peel the sweet potatoes and cut into chunks. Cook in a pan of boiling water for 15 mins, or until tender, drain and mash well, or prepare the mash potatoes.
  2. Meanwhile, heat the oil in a nonstick pan and add the meatballs and shallots
  3. Fry for 10 mins, turning regularly until evenly browned
  4. Stir in the dill, mustard and crème fraîche and heat through, but don’t allow to boil
  5. Divide the sweet potato between 2 plates, top with the meatballs and sauce, and garnish with a little extra dill
